2 medium sized lemons
2 cups of oil
6 big white scallions with the green part well sliced
2 cups of trimmed spinach, well chopped
2 tablespoons of lemon juice
1 teaspoon of fresh ground pepper
1 teaspoon of salt
Direction
Remove your artichoke from acid water, run your lemon on the surface of each and return it back to the acid water. Heat up your oil in a pan. Then, add your scallions and sauté for about 10 minutes until it is soft. Add your spinach and dill, and season with salt and pepper to taste.
Once your spinach is cooked, place your artichokes on it, sprinkle with a little salt and add your lemon juice. Then, cook for another 30 minutes. Taste to know if your seasoning is okay, if not you add a little more salt, pepper and remaining lemon juice.
Sprinkle your oil on it and serve while hot.
